Ricotta Pudding

Mocha Ricotta Creme is quick and delicious.

Recipe Idea: This is a good dessert; its sweet and satisfying, and low in sugar. Don and I found it in The South Beach Diet cookbook. It’s not especially low in calories, however, but it is low in carbs so it is diabetic-friendly. Each serving is 260 calories and contains 17 g of fat, but that’s lower than most desserts. I think of it as Ricotta Pudding.

South Beach Mocha Ricotta Creme Nutrition Label

1/2 cup part-skim ricotta cheese
1/2 teaspoon unsweetened cocoa powder
1/4 teaspoon vanilla extract
1 package sugar substitute
Dash espresso powder
5 mini chocolate chips


Mix together the ricotta, cocoa powder, vanilla extract and sugar substitute. Serve chilled in a dessert bowl, topped with a dusting of espresso powder and the mini chocolate chips.
