Easy Lasagna

 We were talking about food today—something (as you might imagine) I like to do—and one of my coworkers said she had never made lasagna so I thought I’d put up a couple of lasagna recipes. This one was a favorite of Erin’s when she was young. It’s simple; you don’t have to boil the noodles first, and it doesn’t include any ricotta cheese.

Easy Lasagna
Serves 6-8

2-3 pounds lean hamburger
1 medium onion, chopped
Salt & Pepper to taste
1 29-oz. & 1 15-oz can Hunt’s tomato sauce
1 family-size can Campbell’s tomato soup
2 teaspoons Italian seasoning
8-10 lasagna noodles (uncooked)
2 large packages of shredded mozzarella cheese

Brown hamburger and onion with salt and pepper. Drain off grease. Add sauce, soup and seasoning to the hamburger mixture. Simmer a few minutes.

In a 13″ x 9″ pan layer sauce, cheese, noodles until all gone, ending with sauce. Save some mozzarella cheese to add to the top about 10 minutes before it’s ready to come out of the oven.

Bake at 350F degrees for 35 minutes. Add remaining cheese. Bake 10 minutes longer. Let cool a few minutes before cutting. If you have some left over, freeze it in individual-portion size servings. It can be reheated in the microwave.
