This is terrific on any cake, but on Carrot Cake it is amazing.
Cream Cheese Frosting
Covers One 3-Layer Cake
1 8-ounce packages of cream cheese (can use Neuchâtel)
2 sticks of butter, softened
2 teaspoons vanilla
2 boxes of powdered sugar
2 Tablespoons milk
Cream all ingredients together. Spread over cake’s top, sides and between layers. Keep refrigerated.
